Cauliflower - versatile, healthy and delicious

Roasted. Steamed. Mashed. Hashed.  Even baked into a pizza crust.  The possibilities for cauliflower are endless.  They are a great low carb substitute for potatoes and rice.  One of my favorite ways to have cauliflower is steamed and chopped up into rice size pieces.   The mild flavor pairs well with almost any sauce and seasonings.
Cauliflower is also considered to be a superfood.  It is a great source of source of vitamin K, protein, thiamin, magnesium, fiber, vitamin B6, folate, potassium, and manganese.  Packed with vitamin C, one cup of cauliflower contains 73% of your recommended daily intake.  Cauliflower also contains antioxidants and  phyto-nutrients that can protect against cancer, improve digestion, and improve bone health.
